Mexican Fiesta, in Snowy Kelowna!

MMMMmmmmm MEXICAN!
Enchiladas and homemade refried beans.

Maybe it's the minus degree weather we have had but we have been making some sunny Mexican food and some spicy Indian food.  Jon and I have been cookin' it up in Kelowna, and here are two Mexican meals we have had lately.

To the left, we made some Enchiladas.  Corn tortillas (taste so much more legit than flour ones), homemade refried beans (good for you!), homemade salsa, oven baked chicken, and Monterrey Jack cheese, topped with cilantro, and a traditional tomato enchilada salsa.

Neat Tip:  We filled the tortilla's and then put them in our panini grill to cook them (oil free!)

Enchilada sauce:  We made enough of this so that we could have some in the freezer for quick access next time.

 Here are some enchiladas we made another time.

Baked enchiladas and spicy rice.
 We filled the tortilla's, rolled them, tucked them tight together, spread the enchilada sauce over them all, added the cheese and popped them in the oven.

 So delicious, it makes my mouth water just reminiscing about it.
